stocking the freezer
well today was the day to pick up the meat from the processors. the beef from royal gorge packing in canon city and the pork from the chop shop in westcliffe. i had picked up a 19.7 cu ft chest freezer from sears wednesday and then i was out of town till today. on the way home i called a budy and had him plug in the freezer so it would be good and cold when i got there. i stopped first at royal gorge packing and picked up the beef. the owner informed me that he had cut s few steaks from the prime cuts since it seamed to be marbled. now remember this was purely grass fed and grass fineshed. no grain at all. we loaded all the boxes up in the back of my truck and i headed for westcliffe where the freezer was. after unloading the beef i and packing it into the freezer i headed down to the chop shop. after chatting a bit we loaded up the brats and the bacon and ribs and i headed back to the freezer. it wouldnt all fit! i had to fall back on a couple of smaller chest freezers i have at a friends place to get all the meat in a freezer. yep it pack an almost 20 cu ft freezer slam full and put a good dent in the free space in the back up freezer. i doubt that i will be selling any bacon since there is only about 30 pounds and i figure we will probably eat it all up before it is time to butcher the next hogs. same goes for the ribs. i do have a couple hundred pounds of my gluten free beer brats and a few hundred pounds of the beef burger. now i just need to get all ready for setting up at the farmers markets. i was recently invited to participate in the Woodland Park Farmers Market on fridays from 7am till 1 pm in woodland park colorado. i am thinking of giving it a try for a few weeks to see how it is. i stopped by the market today and it seams like a good sized market with a wide range of vendors. big and small.
